For the Cake:
2 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs
1 tablespoon lemon zest (from about 2 lemons)
½ cup fresh lemon juice
1 teaspoon vanilla extract
1 cup buttermilk
For the Lemon Glaze:
1 cup powdered sugar
2-3 tablespoons fresh lemon juice
Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or bundt pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract.
Gradually add the dry ingredients, alternating with buttermilk, beginning and ending with the flour mixture. Mix until just combined.
Step 2: Bake the Cake
Pour the batter into the prepared cake pan and smooth the top.
Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
Step 3: Prepare the Lemon Glaze
In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth.
Drizzle the glaze over the cooled cake.
Slice and enjoy! This cake is best served fresh but stays moist for days.
