For the Caramel Pecan Topping:
½ cup (1 stick) unsalted butter
¾ cup brown sugar, packed
2 tablespoons heavy cream
1 ½ cups pecan halves or chopped pecans
For the Cake Batter:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon (optional)
½ cup (1 stick) unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
Step 1: Prepare the Caramel Pecan Topping
Preheat your oven to 350°F (175°C).
In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream, mixing until smooth.
Pour the caramel mixture into a greased 9-inch round cake pan.
Arrange the pecans evenly over the caramel layer. Set aside.
Step 2: Make the Cake Batter
In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the flour mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Step 3: Assemble and Bake
Pour the cake batter evenly over the caramel pecan layer.
Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 5-10 minutes before inverting it onto a serving plate.
